What’s the best way to buy celery, wrapped in plastic or in a bunch?

Buy it only in bunches, preferably from a farmer’s market in season, which in the Northeast is roughly July, August, and September. The condition of the leaves at the center of the bunch will tell you how fresh the celery is, and so will bending a stalk. If a stalk is rubbery and flexible, it’s old. The leaves also carry the most celery flavor, and are very useful in many stocks and soups.
